To backup and restore Exchange 2000, I have a good article as follows:
To backup a database:
1. Dismount the database that you want to back up.
2. Verify that the database files (.edb and .stm) are both Consistent and
matched to each other by running ESEUTIL /MH from the
x:\\programfiles\\exchsrvr\\bin directory.
3. Copy each .edb database file and its corresponding .stm streaming
database
file to the backup media.
NOTE: If you use multiple Storage Groups and multiple Stores, be aware to
dismount all the stores and backup all the databases. Each Store in a
Storage Group has his own database(s).
To restore a database:
1. Install a new Windows 2000 server with the latest Service Pack. The
Windows 2000 naming convention does not necessary have to match the one from
the old server.
2. Install Exchange 2000 on the server, with the same naming convention as
the old Exchange 2000 server. This means: use the same Organization name,
same Administrative Group name, same Storage Group name and the same Store
name.
3. Stop the Microsoft Exchange Information Store service.
4. Remove all the files from the location where to restore the database(s).
For the First Storage Group this will be the MDBDATA folder. For the other
Storage Groups this will most likely be in a folder with the same name as
the Storage Group.
4. Copy the matched and Consistent .edb and .stm files for the backup
database(s) into the appropriate locations. (Not the log files)
5. Start the Microsoft Exchange Information Store service.
6. Set the correct locations of the database(s) under the properties
(Database tab) of the Mailbox Store and check the \"this database can be
overwritten by a restore\" box.
7. Mount the restored database(s).
8. Create new user(s) by using the Active Directory Users and Computers MMC
snap-in, and choose NOT to create an Exchange Mailbox.
9. In Exchange System Manager, expand the Information Store node to expose
the Mailboxes node.
10. Right-click Mailboxes and then click Cleanup Agent.
11. Right-click the mailboxes that are covered by a red X, and click
Reconnect. Then choose the User Account you want to connect to this mailbox.
12. Connect to the mailbox using a MAPI client such as Outlook 2000.

NOTE:
When you attempt to reconnect a mailbox from a deleted user in Exchange
System Manager, you receive an \"Operation succeeded\" message, and then you
receive the following error message:
The object has not been replicated to the destination server yet. Wait for
replication to complete and try again. Operation: Updating Mailbox Resources
on server EXServer.... ID no. c1031731 Exchange System Manager
This error message occurs whether or not replication has occurred. The
mailbox is still marked for deletion.
Although the error message is displayed, the mailbox is reconnected. If you
wait a few minutes, the mailbox is no longer marked for deletion, and the
name on the mailbox changes to the name of the user it was reconnected to.
Depending on the size and number of domain controllers in Active Directory,
the change may take longer to resolve.
NOTE:
When you need to reconnect a lot of mailboxes, you can use the tool Mailbox
Connect, which can be found on the Exchange 2000 CD at
I:\\support\\utils\\i386\\Mbconn.exe.
